Soya Granules-Bell Pepper Sandwich

I have been playing around with sandwiches a lot recently and they are so versatile and very easy to put together. Even in this sandwich you can add any veggie, omit cheese, add paneer, etc. I bought this pack of soya granules ages back and it was lying unopened and finally it was used for this sandwich. Inspiration is from a food network show where the host was making a beef sandwich. I have used soya granules and modified some ingredients based on my need. 
For the kids I added extra cheese and for us I made one with no cheese and one with little cheese. The bell pepper-onion mix can also be used in a burrito.  You can also make a panini style sandwich instead of broiling like I did. So the possibilities are endless :) . Off to the recipe.


Healthy sandwich.

Ingredients
2 tsp olive oil (any oil will work)
2 cups sliced bell peppers (I used colored ones, you can use just green also)
1 cup sliced onions
Pepper powder to taste
Salt for the granules and for the veggies
1/2 cup soya granules (little goes a long way)
1/4 – 1/2 cup tomato puree or chopped tomatoes
Chilly powder to taste
Cheese as needed (optional)

Method
Heat oil and add the sliced onions and bell peppers.

Add salt and pepper. Mix and saute until the vegetables are done.

Vegetables are cooked. Remove and keep aside.

Meanwhile add the soya granules to a pot of boiling water.

Let it sit for 10 minutes. See how they have plumped up.

Drain the soya granules and squeeze out as much water as possible and add them to the same vessel that was used for the vegetables.

Add the tomato puree or chopped tomatoes.

Add chilly powder and salt.

Mix well. Saute for a few minutes until the raw smell of the chilly powder is gone. Say 10 minutes. Then turn the stove off.

Get the bread ready. Place some cheese.

Then add the soya granule mixture.

Next place the veggies.

More cheese on top.

Place in a broiler for the cheese to melt.

I made one with cheese and one without. This one does not have cheese.
