This is a very easy pickle and takes only minutes to prepare. Pickles in vinegar are entirely new to me since the pickles I know of are mostly made with chilly powder, salt, etc. during the summer months and the pickle lasts a year. Although I have made a ton of Indian pickles, the thought of making the ones in vinegar did not cross my mind until I watched the food network show “10 dollar dinners”. As soon as I watched it, I knew I had to make it.
The pickle did not disappoint and we all loved it. Make sure you do not slice the cucumbers too thin. We used to buy this for my son from the store not knowing it was easy to make. They do last a while in the refrigerator and taste great in sandwiches, burgers, burritos, etc. Off to the recipe. Recipe from food network show “10 dollar dinners”.
Fresh and pickled cucumber.
Ingredients
3/4 cup water
1/4 cup vinegar
2 tbsp chopped onions
3 garlic cloves chopped
1 tsp chilly flakes
2 tsp salt
2 tsp sugar
Method
Take water, vinegar, chopped onions and garlic in a vessel.
Add chilly flakes, salt and sugar. Bring to a boil.
Simmer for 5 minutes.
Take the cucumber slices in a bowl.
Pour the hot vinegar mixture over the cucumber slices.
Tasty pickle ready.
