Mocha-Chocolate Shortbread

Ingredients
1 1/4 cups all purpose flour
1/2 cup powdered sugar
1 tsp instant coffee (I used Bru instant coffee)
2/3 cup butter softened
1/2 tsp vanilla extract
2 cups semi-sweet chocolate morsels
Yields : 16 – 20 squares
Method
Take all purpose flour in a bowl.
Add powdered sugar.
Add instant coffee.
Mix to combine.
Add softened butter.
Add vanilla extract.
Beat on low speed until blended.
Add 1 cup chocolate chips.
Mix gently to combine.
Take the dough in an ungreased 9-inch square pan and press down with fingers to flatten.
Out of the oven. It does not look very different than the way it went in
.
Pour the remaining 1 cup chocolate chips on top and allow to melt. I kept it back in the oven for a few minutes to help the chocolate to melt.
When the chocolate chips have melted, spread to form a layer.
Cut into squares and allow the chocolate to set before removing from the pan. I left the pan for a couple of hours and then removed the pieces.
