Rava (Sooji) Idli

Day 4 of the blogging marathon with theme ‘Idlis”. This idli is very easy to make as it does not involve any grinding or fermenting. It is perfect for a light and quick weeknight dinner. Carrots and peas are optional and they add a nice color. It is also a good way to sneak in carrots into picky eaters. Another variation would be to add some spinach. I am loving this week of easy recipes and off to another easy recipe.


Ingredients
1 cup rava (sooji)
1/2 cup curd (yogurt)
2 tsp ghee
1/2 tsp peppercorns
1/2 tsp cumin seeds
Small piece of ginger chopped
Few cashews chopped
1 carrot grated
1/2 cup frozen green peas (fresh peas can also be used)

Method
Dry roast the rava and add curd to it. I normally roast the whole 4 lb packet and keep in an airtight container.

Heat ghee and add cumin seeds, peppercorns, ginger pieces and cashews. Roast until the cashew turns golden brown.

Add the roasted mixture to the rava-yogurt mix. Mix well.

Add salt.

Using water form a thick batter. Use water only if needed. I used about 1/4 cup of water. We do not want the batter to be runny.

Add grated carrot and peas.

Mix well.

Pour in idli plate and steam for 10 minutes like regular idli.

Steamed and ready.

Tasty rava idli ready. We had it with coconut chutney.
