Hope everybody had a fun filled Halloween. I had been wanting to post this the whole of last week, but could not get to it. This is the first year I am roasting pumpkin seeds. Last year when we carved pumpkins, my son wanted me to roast them and I cleaned the seeds, but did not get to baking it. This year I started cleaning the seeds as soon as we finished carving pumpkins. The dry seeds were sitting on the counter top for 2 days and my kids kept asking whether they were done and I finally got around to baking them. It is pretty simple, but I kept postponing since I needed a quiet time to take pictures. Well that is a rarity with 2 kids . The whole process is very simple and just needs some monitoring.
The roasted seeds were crunchy and tasted good. This is a healthy snack to munch while watching TV. Off to the easy recipe.
Ingredients
2 tsp olive oil
Salt to taste
1/2 tsp chilly powder
1/2 tsp chat masala
Notes
1. Feel free to play around with seasonings like garlic powder, herbs, etc.
2. You can also bake at 300F in which case you need to stir it more often, say every 15 minutes.
Method
Wash the seeds well.
Pat dry with paper towels or just leave it on the counter top to dry.
Take the dry seeds in a bowl and add olive oil.
Add salt.
Add chilly powder.
Add chat masala.
Mix it all together.
Spread in a single layer in a cookie sheet and bake in a 250F preheated oven until the seeds turn lightly brown and toasted. Stir the seeds in intervals. It took around 1 hr for me.
Out of the oven.
Crunchy seeds ready for a healthy snack.
