Waldorf Salad

Day 1 of blogging marathon and my theme is “Soups and Salads”. Although soups and salads are mostly easy to put make or put together, I have always been intimidated by them. The only salads I have tasted would be the ones with lettuce and few other vegetables with ranch or Italian dressing. So as you can see, my knowledge of salads is pretty limited. So to expand my knowledge of soups and salads and to also try out new varieties of the same I chose this to be my theme in spite of it being Diwali week. This salad has apples in it and that was the main reason it even caught my attention. So friends, enjoy the Diwali week and enjoy this salad when you need something simple and easy the days following the big Diwali feast.

So are you ready to chop the ingredients and toss them together. Can it get any simpler? Now off to the immensely simple and healthy salad.


Ingredients
3 tbsp non-fat greek yogurt
1 tbsp lemon juice
Salt to taste
Pepper to taste
1 sweet apple chopped
1/4 cup walnuts toasted and chopped
1/4 cup raisins

Notes
1. Mayonnaise can be used instead of greek yogurt.
2. The original recipe also uses chopped celery.

Method
Toast the walnuts and chop them.

Take yogurt and lemon juice in a bowl.

Whisk to combine.

Add salt and pepper.

Add the chopped apple. Mix.

Add walnuts and raisins.

Mix it all together. Serve on a bed of lettuce.

Filling and healthy salad ready.
