Oven Roasted Fingerling Potatoes

I think fingerling potatoes are the cutest potatoes ever and I have been eyeing them any time I visit Costco. But then I was not sure what to do with them and it was like window shopping for the most part until recently. I have been using the oven regularly and it suddenly dawned that I could roast these beauties. There is no hard and fast rule on ingredient list and seriously there is no recipe here. Just toss everything and throw into the oven. These potatoes were crunchy and slightly sweet and is a perfect accompaniment to any meal. You can even have it as an evening snack.
Of course you can use it like a regular potato. The chaat masala added the needed tanginess and my kids enjoyed it, thanks to the colors :) . Off we go.


20 fingerling potatoes sliced lengthwise
1 tsp red chilli powder
1/2 tsp salt
1/2 tsp cumin seeds (optional)
Pinch of turmeric
1/2 tsp chaat masala (optional)
1 tbsp olive oil

1. Use any herb of choice and toss.

Fingerling potatoes washed and ready to be sliced. Don’t they look pretty?

Slice each potato into half.

Take the sliced potatoes in a bowl.

Add red chilly powder.

Add salt.

Add cumin seeds.

Add turmeric powder.

Add chaat masala.

Add olive oil.

Toss them all to combine.

Lightly spray a baking sheeet. I have placed foil for easy cleanup. Spray the foil if using. Arrange on a single layer with the cut side down.

Bake at 425F for 30 minutes or so until they look all wrinkled and smell great. :)

Ready to be devoured. Eat it as a side dish or a snack.
