Chinese Fried Rice

This has to be by far one of the easiest dishes to put together and is a perfect weeknight meal. We don’t normally eat out, but if we do my first choice would be Chinese. I love how the sauces come together and add so much flavor to the dish. My aunt made this rice when I visited her and I loved it for its simplicity. But it took few years for me to get comfortable with soy sauce to try this rice at home. This dish is also packed with vegetables, making it healthy. The spring onions add that subtle onion flavor and the chilli sauce imparts the needed heat. I also love how colorful this dish is.
Any vegetable can be used. The key is to make sure that the vegetables have that crunch. You can also scramble some eggs and add to the rice finally. Off to the recipe.

Chinese Fried Rice | Cooks Joy

Ingredients
1.5 cups uncooked basmati rice
1 carrot (1/2 cup chopped)
1/2 bell pepper (2/3 cup chopped)
cabbage (2/3 cup chopped)
1/4 cup peas
1 tbsp oil
4 tsp soy sauce
1.5 tsp chilli sauce
Salt

Method
Cook the rice using the ratio of 1 : 2 for rice : water. Allow to cool so the grains stay separate.

Get the vegetables ready. Chop the vegetables finely.

Heat oil and add all the vegetables. Saute for a couple of minutes.

Add the soy sauce.

Add the chilli sauce and salt. Since the soy sauce also has some salt, taste before adding more salt.

Saute for around 5-7 minutes until the vegetables are done. We want the vegetables to have a crunch to them.

Add the cooked rice.

Mix gently.



Yummy fried rice ready. We had it with some broccoli-garbanzo fry.
