Chewy Blueberry-Oats Bars with Honey

Ingredients
3/4 cup oats
3oz wheat flour
1/4 cup brown sugar
1/8 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla extract
2 tbsp butter
1/4 cup honey
1/2 cup blueberries

Notes
1. I modified the original recipe to use half the amount of butter. I also used honey to replace 1/2 of the sugar. The honey made the bars chewy and they held their shape pretty well.
2. The key is to allow it to cool before slicing.
Method
Sift whole wheat flour. Combine oats and whole wheat flour.
Add brown sugar.
Add cinnamon.
Add salt.
Mix together.
Now add melted butter.
Vanilla extract goes in next.
Next goes the honey.
Toss it all together. The honey holds the mixture pretty tight.
Add the blueberries. Just toss them together. The blueberries do not stick with the mix, but we can press them in when we place in baking tray.
The original recipe called for a 8 x 8 pan. I halved it and used the small rectangle pyrex container (3.5 cup). Spray and flour the baking dish.
Bake at 350F for 20 minutes. The blueberries opened up nicely and had that pleasant color. Now as much as you are tempted to eat it right away, it is better to allow it to cool. Cooling helps the bars to hold up the shape.
I refrigerated it for few hours and then sliced it into bars.
Yummy, chewy bars with blueberries ready. There are a variety of ways to enjoy this treat. You can have it like a breakfast bar or add some ice cream to it and have it for dessert.
(I also made the original recipe which was more of a crumble and obviously tasted good, thanks to the butter. So go for chewy or crumble based on the mood
)
