Fajitas are a popular Mexican dish where grilled vegetables or meat are placed over flour or corn tortillas. They are very easy to make and can be jazzed up with different ingredients. Due to its simplicity it is a perfect weeknight dinner. It is also kid friendly since we can add just the stuff which kids would eat, like in my case I add mushrooms and black olives for my son. I have kept it pretty simple with just grilled vegetables and salsa, but you can add sour cream, guacamole and rice based on need. Have you’ll noticed the oval cast iron pan used in restaurants for fajitas .. they look so cool and the vegetables are sizzling hot when brought to the table. Love it.
Coming to this recipe it is very simple and there is nothing much to it. We sometimes saute the vegetables and sometimes grill them. I am sure everybody knows how to grill and assemble the veggies

, but I think you’ll might be interested to see how I do it. So here we go with the pictorial.
Ingredients
2 cups mushrooms (about 5 oz)
1 green bell pepper
1/2 red bell pepper
1 medium onion (1/2 big onion)
1 zucchini
Corn tortilla
Salsa
Salt
Pepper
Sour cream (Optional)
Cheese (Optional)
Tips
1. Avocado slices or guacamole can be added.
2. Tomatoes and salsa can be added.
Method
You can saute or grill the vegetables. Any choice of vegetable can be used. I have used green bell pepper, red bell pepper, zucchini, onion and mushrooms. Love the grill marks on the vegetables.
Toast the tortillas in a skillet or grill.
Start assembling. I have used corn tortillas. Place the grilled vegetables in the tortilla. Add salsa, salt and pepper.
Add sour cream and cheese if needed. This is totally optional.
A close look at the tasty fajitas. I like it with just the vegetables and salsa. The crispy vegetables and the tangy salsa added a lot of flavor to the corn tortillas.
