Spaghetti with Vegetables

So we are off to day 5 of blogging marathon under the theme Kid’s Delight. For this marathon I have focused on what my kid likes and this one is on the top of his list. He has very few Indian dishes which are his favorite, but the others he eats because he knows he has no choice. My daughter who is 3 on the other hand is so hard to convince and her tastes are varying each day. If one day she goes goo-gaa over a dish, the next day she acts as if she has never seen it before. Tough times .. huh .. So at this point I am not taking her likes into account at all :) . But to appreciate my son I try to include the things which he likes on a regular basis. So pasta is on the menu once a week at the least. I always make it healthy with lots of vegetables and very minimal or no cheese. So here it is a simple and low-fat spaghetti dish. Ingredients
4 servings spaghetti

1 tbsp olive oil
1 tsp cumin seeds
4 cloves garlic minced
2 cups mushroom chopped
4 cups broccoli chopped
1/2 tsp pepper or to taste
1.5 cups tomato sauce (I used store bought Prego sauce)
Salt to taste
handful black olives
parmesan cheese


Method
Heat olive oil and season with cumin seeds. Then add garlic and saute a couple of minutes.


Next add the mushrooms and saute for few minutes until the mushrooms reduce in size to almost half.

 

Then goes the broccoli followed by salt and pepper. Add the tomato sauce and mix everything well.

Let the vegetables cook for say 10 minutes. Meanwhile get the spaghetti going. Bring a pot of water to a boil. Add salt and the spaghetti. Cook as per package instructions.

Vegetables are done by now.

Time to bring the dish together. Add the cooked noodles to the vegetable mix.

Toss the mix around so that the sauce gets coated evenly over the noodles.

Done with mixing. It looks delicious already right :)

Both my kids love black olives. They can eat cans and cans of it with no complaints. Slice few olives to add to the spaghetti.

Bring it all together. Add the olives and a little bit of parmesan cheese for color. I have also added few tomato pieces. Simple, delicious and healthy spaghetti ready.

Tips
1. Use whatever vegetable is your kid’s favorite.
2. Use more cheese if needed.
