Simple Vendakkai (Okra) fry

Another one of my comfort dishes. What can I say about it other than I love it .. period. Growing up this was one of my favorite vegetables however it was cooked be it sambar, kuzhambu or fry. Since it also has a lot of nutrients my mom made it much often and I should say that even now when we visit home okra will be on the menu multiple times in a week. Yes it is a slimy vegetable but if cooked right it tastes great. Try for yourself. Off to the recipe.
Simple Okra Fry (Vendakkai Poriyal) | Cooks Joy

Ingredients

2 tsp oil
1/2 tsp mustard
1/2 tsp urad dal
1 small onion chopped
1 pound okra
1/2 tsp sambar powder
Salt
Method
Okra and onions the main ingredients. Wash okra and pat dry before cutting them into thin discs. Moisture in it will cause it to get slimy.

Add oil and season with mustard and urad dal.

Next add the onions and let it cook.

Add the okra followed by sambar powder and salt.

Let the okra cook on a medium-low flame. Do not add water and also do not stir frequently. I have used only 2 tsp of oil and hence cooking on a low flame. Half-way through and this is how it looks.

Turn off the stove when the okra is cooked well. Comfort in a bowl ready to be gobbled up.

Tips
1. Adding a tsp or 2 of yogurt while cooking helps in preventing the okra from becoming slimy.
2. Adding water while cooking okra will cause it to get slimy. So do not add water.
3. We can roast it longer by using more oil. It gets crisp and yummy.
4. Can use chilly powder or dry chillies instead of sambar powder.
5. Onion is optional.
