Potato Rice / Pulao

This is one of my mom’s special dishes and all my friends love it. This dish brings back memories of my carefree college and office days where I always had a group of friends waiting to pounce on the food. This is a very simple yet flavorful dish and uses minimal ingredients. I made this along with other dishes for my daughter’s birthday. The key ingredient is coriander leaves, so make sure you have a big bunch before making this rice. Let’s make this simple rice.
Ingredients
1.5 cups basmati rice cooked
1 tbsp oil
Few cloves
Small piece of cinnamon
1/2 medium onion
4 green chillies
1/2 inch piece of ginger or 1 tsp ginger paste
5 small potatoes sliced
1/2 tsp turmeric powder
Salt
1 bunch cilantro cleaned and chopped
Method
Wash rice and let it cook. I use 3 cups of water for 1.5 cups of basmati rice. When done keep aside to cool. Do not mix when the rice is hot as it will make the rice go mushy. We want the grains to be separate. Lets prepare the mix next.
Heat the oil and add the cloves and cinnamon. Then add onions and green chillies followed by chopped ginger. Saute until onions are cooked.
Next add the potatoes, turmeric powder and salt. Sprinkle a little water and cook until potatoes are almost done. We do not want to over cook the potatoes as they need to retain the shape when we mix with rice.
The potatoes are cooked.
Add the key ingredient which is the coriander leaves and mix well. Ready for rice.
Add the mix to the cooled rice.
Start mixing slowly. Halfway through.
Mix further until all grains are coated with the mix. That is it. Simple and flavorful potato rice ready.

Tips
1. Increase or decrease the chillies based on need.
2. Rice has to be cooled before mixing. When cooked spread in a big plate for the rice to cool.
3. Can also use chopped eggplant instead of potatoes.
4. This can also be made as a one pot meal in which case add the rice along with potatoes and cook.
