The first thing which came to my mind when I received the glass pan from LocknLock was Potato Au Gratin. But since it is loaded with fat I started searching for a healthy version of it and found one in Food Network. First time making it and I was skeptical but it turned out excellent. My kids loved it. The recipe called for 1% milk but I had only fat free and used the same.
5 small red or yukon gold potatoes sliced with skin
1 clove garlic mashed
1 cup cheddar cheese
1/2 tsp pepper
Slice potatoes into slices of even thickness. Mandoline will be helpful to slice evenly.
Boil them until tender. We do not want the potatoes to break apart. Let them cool a bit.
Prepare the white sauce. Heat the butter. Whisk in flour and mix. Then add the cold milk slowly stirring continuously. Add in the garlic and thyme. Keep stirring until the mix thickens a bit. For fat free milk it will not thicken a lot.
Add 1/2 of the cheese and stir until the cheese melts. Add salt and pepper.
Grease an oven safe pan with spray. I have used the glass pan from LocknLock. The shape was perfect and the quantity it held was good for 2-3 servings. First layer the potatoes. Then pour 1/2 of the sauce over it. Add a second layer of potatoes.
Add the remaining sauce. Sprinkle the remaining cheese over it. Place in a 350F preheated oven for 20 minutes. Then place under broiler until the cheese is browned.
Remove from oven. Let it rest before serving as it retains its shape better after cooling. Also the sauce thickens more on cooling. This pan is so beautiful and elegant and can go from oven to table.
