Methi Dal

Had this lonely bunch of methi leaves in the fridge after making methi paratha. I wanted to make something quick and easy with it and got this recipe from my friend. The only time consuming part is to wait for the toor dal to be cooked. Apart from that this is a really easy and comforting meal and goes well with rotis or rice. Lets get cooking.
Ingredients
1 tsp oil
1/4 tsp mustard seeds
2 red chillies
Few curry leaves
1 small onion
1 tsp ginger paste or a small piece of ginger minced
1 tsp garlic paste or 2 cloves fresh garlic minced
1 tomato
1 bunch methi leaves or 1 cup methi leaves packed
1/2 cup toor dal
Salt to taste
Method
Pressure cook the toor dal and keep it aside. Add oil to the pan and do the seasoning with mustard, red chillies and curry leaves. Then add onions, ginger and garlic. Saute till onions are cooked.
Add tomato and cook till it turns mushy.
Then add the methi leaves and saute till it wilts.
Finally add the cooked toor dal. Add salt.
Yummy methi dal ready to be served. We had it with rotis. One wholesome dinner.

Tips
1. Moong dal can also be used.
2. Can make it under 30 minutes by cooking the dal simultaneously when the rest of the cooking is being done.
