Making yogurt at home | Cooks JoyBack home while growing up I remember watching my grandma make yogurt every day. A little yogurt was added to the remaining milk every night and voila yogurt was ready the next day. Sounds simple right. Many households in India still make yogurt everyday. Homemade yogurt is fresh and I feel that it mixes well with Indian dishes whereas the store bought yogurt seemed to be pasty and did not mix well especially with raitas.

Ever since I started making yogurt at home I have not gone back to store bought yogurt. Lets get started.

4 cups Milk
1 tablespoon starter yogurt

1. Boil milk. I use the microwave for this. Once you know how much time it takes for say 4 cups of milk you dont need to stand by the microwave monitoring it.
2. Let it cool to lukewarm.
3. Now add the starter yogurt. Homemade yogurt or store bought yogurt can be used as a starter.
4. Leave it undisturbed in a warm place.
5. Yogurt should be ready in 8-12 hours.

1. During winter when the temperatures are below freezing I normally put the container in the oven with just the oven light on. This helps the yogurt to set.
2. I use fat-free milk to make yogurt. It is not going to be thick as it is when made with whole or 2% milk but it tastes great and it is good if you are watching calories.
