Kunuku is an Indian deep fried snack made with lentils. My mom never made it and I came to know about it only from my inlaws. I deep fry snacks only once in a blue moon and this snack takes precedence since my hubby and kids love it. Now is there anyone who does not like deep fried snack?
Ingredients
1/2 cup channa dal
1/4 cup toor dal
1/8 cup urad dal
1/4 cup rice
2 red chillies
1 green chilly
2 tsp channa dal soaked separately
Small piece of ginger minced
Curry leaves
Coriander leaves
Salt
Asafoetida
Oil for deep frying
Method
Soak the dals and rice for a couple of hours. Grind coarsely along with salt and chillies without adding much water. We should be able to make small balls with it.
To the ground mixture add the 2 tsp channa dal which was soaked separately along with ginger, curry leaves, coriander leaves and asafoetida. Mix well.
Make small balls and deep fry.
Delicious kunuku which is crunchy on the outside and soft on the inside is ready to be munched on. Kunuku along with tea in the evening .. now that is tempting right.

Tips
1. Ginger, curry and coriander leaves can be omitted if not available.
2. Left over adai batter can also be used to make kunuku.
3. Chopped cashews can be added.
